Carrot pudding

Carrot pudding, as it turns out, is a very yummy dessert. I glanced at the recipe before (carrots, potatoes, flour, etc.) and figured it for a side dish. I didn’t get around to the “cup of sugar, cup of raisins” part until I actually made it. The good part is that there is no added fat—in addition to the ingredients I just listed, there are some spices and baking soda, and that’s it. It’s steamed, like plum pudding, and tastes like carrot cake. So I had dessert last night. I also threw my healthy broiled fish or chicken idea out the window—we had pizza. I had two slices of a medium pizza that added up to about 500 calories! Ugh. At least when Brian suggested ice cream later, I turned him down. And since I missed breakfast, my total calories for the day wasn’t far off my goal. I also got in the pilates abs workout in the evening.

Today I started with yet another 45 minute walk. Breakfast was grapes, walnuts, and milk (not really planned—I was in a rush to eat before getting ready for church, so I grabbed a couple of easy things). After church, I bought a new scale. I’m going to reserve judgment until I weight myself in the morning, but I think this scale is both more accurate and more depressing. My weight when I came home and tested the scale was my 157 pound starting weight. It’ll probably be a bit less when I weigh myself in the morning, but nonetheless I feel like I’m back to square one, even though I know my starting weight was probably a few pounds higher. I still feel as if I’ve lost nothing.

Lunch was scrambled egg with tomatoes and peppers wrapped in a tortilla. Yummy and filling, and pretty low calorie. Dinner will be the fish I didn’t make yesterday, rice, and broccoli. I had a tablespoon of chocolate chips for a snack. I hope I can do another pilates DVD after the kids are in bed.
